This recipe calls for resting the shaped croissants in the fridge, only taking them out while the oven preheats, I think this would solve your problem, if the butter starts out colder, it is less likely to melt out in the oven. <br /><br />For the chocolate ones I just used semi-sweet chocolate chips. Not very gourmet, I know, but it was all I had and I didn't want to go back to the store. I think you could use whatever you like. I prefer dark chocolate but it doesn't really matter. For those, I cut the dough into rectangles, folded the dough over on the chocolate kind of like a letter, and then flipped them over so the seam was on the bottom when they baked. <br /><br />If you want more step by step photos, check out the website I got the recipe from. I tried making croissants last...This looks amazing! I tried making croissants last month and it was a complete disaster! I proofed them at too high of a temperature and all the butter melted out and the whole thing was a mess! But this recipe has given me some confidence to try again!<br /><br />What kind of chocolate did you use for the chocolate ones! Semi-sweet, milk chocolate, chips, sticks, bars...? And for those, do you just not cut the rectangles in half diagonally?
